Mostly I prepared easy and simple meal for our lunch. For our lunchie today, it’s a one meal dish – Stewed Pork with mushroom, white carrots & Quail Eggs. It was a simple yet yummy dish!
Stewed Pork with Mushroom and Quail Eggs
Ingredients:
- Streaky Pork (五花肉)
- White Carrots
- Dry Mushroom
- Quail Egg
- Dried Scallop
- Oyster sauce, light soya sauce, dark soya sauce & Sugar
Method:
1. Soak dry mushrooms in small bowl of hot water and remove the mushroom stem. Make sure the mushroom is thoroughly clean before you soaked it overnight. (It is not necessary to soak it overnight, but for me, I need to cook it early for my boys’ lunch so I do not have enough time to soak it in the morning. (Do not pour away the water)
2. The next morning, I soaked the dried scallop for 30 minutes.
3. Marinade the streaky pork with oyster sauce and light soya sauce for 30 minutes
4. Heat oil in deep pot, add in the streaky pork heat and stir fry. Next add in dark soy sauce and pinch of sugar.
5. Add the rest of the ingredients (including the soaked mushroom and scallop water) except eggs. Bring to a boil, then lower heat to a simmer (with lid partially closed) for 45 minutes or until the meat is tender.
6. During the last 10 minutes of simmering, add quail eggs.
7. Lastly, Enjoy!
