My simple lunch – 酿豆腐

I cooked a simple lunch for myself after sending my boys to school.


Recipe:

Ikan Bilis Soup Base:

Ingredients
- 100g ikan bilis (anchovies) 江鱼仔
- 1 litres of water
- few cloves of garlics

Note: Adjust quantity of ikan bilis and water according to the saltiness of the ikan bilis you bought.

Directions
- Soak Ikan bilis in water for 5 minutes. Rinse several times until water runs clear.
- In a pot, bring water to boil. Add in washed Ikan bilis and garlic into the pot. Boil for 15 minutes. Do not boil for too long or the broth will become bitter.
- Remove Ikan bilis and garlic. Strain the broth through a sieve.

Beancurd with mincemeat stuffing:

- Marinated the mincemeat with (light soya sauce, corn flour and small amount of sesame oil), set it aside for 30 mins to 45mins .
- In the meantime, Pan fried the beadcurd.
- Slit a slot in the centre of the fried beancurd and stuff the marinated mincemeat in.

酿豆腐 Soup

- Bring the Ikan bilis Soup base to a boil.
- Put in the beancurd with meat stuffing
- When its cooked, add in some bean sprout just before you turn off the stove.
- Enjoy!
